ABOUT Chicken Masala Drumbsticks RECIPE

These chicken drumbsticks started out as masala chicken, but then I decided to turn them into deep fried chicken simply for a change. Normally western fried chicken is batter fried only so I gave them an Indian touch. Try them, you would want to have more!

Ingredients Serving: 5

  1. 10 chicken legs
  2. 2-3 large eggs
  3. Breadcrumbs as per need
  4. 2-3 tbsp oil
  5. Salt and pepper to season eggs
  6. Enough oil to deep fry
  7. Marinade for chicken
  8. 2 tbsp Ginger-garlic paste
  9. 1 tsp turmeric powder
  10. 2-3 tsp red chili powder
  11. 1 tsp green chili-coriander leaves paste
  12. 2 tsp garam masala powder
  13. 2 tsp coriander powder
  14. 3 tbsp thick yogurt
  15. 1 tbsp tomato chili sauce
  16. 1 tbsp oil
  17. Salt to taste

Instructions

  1. Clean, wash, and drain chicken. Dab moisture with clean kitchen napkin.
  2. Combine all the marinade ingredients and whisk until smooth.
  3. Give cuts in the fleshiest part of chicken legs.
  4. Take a large container. Rub the marinade thoroughly into the legs. Cover the container with cling film and refrigerate for atleast an hour.
  5. In a deep pot/kadhai, heat oil. Drop chicken pieces in the kadhai and mix thoroughly to coat with oil.
  6. Cover the pot and cook on low heat till oil separates.
  7. Remove the lid. Increase heat and let the excess moisture evaporate till only the thick masala is left behind. Switch off gas and cool.
  8. Take a plate filled with breadcrumbs.
  9. Beat eggs in separate bowl. Season them with salt and pepper.
  10. Heat oil in a wide wok.
  11. Dip chicken legs in breadcrumbs and roll them eggs.
  12. Deep fry the chicken on all sides till golden in color. (Do not leave them too long to fry else they will darken more than necessary).
