ABOUT Shell Pasta in Vegetables RECIPE

Ingredients Serving: 4

  1. 300 gm shell pasta
  2. 500 ml passata or 2 cup tomato purée
  3. 1/2 cup broccoli florets chopped
  4. 1/2 cup mushrooms chopped
  5. 1/4 cup scallions chopped
  6. 3-4 garlic cloves minced
  7. 1 white onion chopped
  8. 1 teaspoon basil
  9. 1 teaspoon oregano
  10. 1 teaspoon rosemary
  11. 1 teaspoon peppercorn powder
  12. 1 teaspoon vinegar
  13. 1 teaspoon sugar
  14. 2 tablespoon olive oil
  15. Salt to taste

Instructions

  1. Boil pasta in enough water ,drain and wash under running water . Apply a layer of a teaspoon olive oil and set aside.
  2. Heat olive oil in a pan , add scallions , onions and garlic. Saute for a minute.
  3. Add broccoli and mushrooms and cook for for few minutes till veggies are done.
  4. Now add passata sauce , basil , oregano and rosemary. Mix well add salt , sugar and peppercorn powder.
  5. Finally add vinegar and cooked pasta , toss over gently in veggie sauce and cook for 1 minute.
  6. Remove from heat and serve hot garnished with grated cheese.
