ABOUT Two-minute stir fry subzi (An instant side with any Indian bread) RECIPE

An instant subzi – a vegetable side dish enjoyed with any Indian bread. The subzi is made using fresh vegetables and paneer. Crunchy vegetables combine with soft, juicy and delicious cubes of paneer simmered in a creamy sauce made in two minutes.

Ingredients Serving: 3

  1. 400 gms fresh Paneer (Cottage Cheese) – cut into strips
  2. 1 medium Green Capsicum – cut into strips
  3. 2 medium Onions – sliced
  4. 2 medium Tomatoes – cut into strips or diced
  5. 2 tbsp Oil
  6. 1 tsp Cumin seeds (jeera)
  7. 1 dried red Chili
  8. 2 Green Chilies – minced
  9. 1/2 tsp Kashmiri Chili Powder
  10. 1/2 tsp Turmeric Powder (Haldi)
  11. 1/2 tsp dry Mango Powder (Amchur)
  12. Salt to taste
  13. 3 tbsp fresh/store bought Cream
  14. 1 tsp Garam Masala
  15. 1 tbsp chopped Coriander Leaves

Instructions

  1. Take a non-stick pan, add oil and when heats up add cumin seeds and dried red chili.
  2. When cumin starts to change color, add minced green chili and sliced onions. Fry till translucent.
  3. To this add Kashmiri red chili powder, turmeric powder and dry mango powder. Mix and add capsicum strips and stir for 30 seconds.
  4. Toss by adding paneer strips. Drop in chopped tomatoes and season with salt. Cook covered for another 30 seconds.
  5. Reduce the flame and add cream and garam masala. Stir gently and cook for another 30-35 seconds.
  6. Turn off the heat and sprinkle fresh chopped coriander leaves and serve hot.
