Corn and Meethi Kebabs

Ingredients to make Corn and Meethi Kebabs

  • Boiled sweet corn kernels: 1 cup
  • Mint and coriander leaves: 2 tbsps each, chopped
  • Meethi leaves: 1/2 cup (retain the stems too)
  • green chillies: 2
  • onion: 1 small size, finely chopped
  • Boiled potatoes: 2 medium size, properly mashed
  • ginger: 1 tbsp, grated
  • garlic: 5 cloves, grated
  • salt to taste
  • coriander powder: 1 tsp
  • red chilli powder: 1 tsp
  • Amchoor: 1 tsp
  • Garam masala: a pinch
  • Rice flour: 2 tbsps
  • maida: 1 tsp
  • oil: for frying

How to make Corn and Meethi Kebabs

  1. In a blender, add corns, methi, mint and coriander leaves, onion, chillies, ginger and garlic. Coarsely blend it all together.
  2. Take the mixture out of the blender in a bowl. To it add mashed potatoes, flour and all the seasoning. Mix everything well.
  3. Check for seasoning and the give a desired shape.
  4. Now shallow fry these kebabs in hot oil till they are golden brown.
  5. Take it out on an absorbent paper and sprinkle some chat masala.
  6. Serve with onion rings and coriander-yogurt dip.
