Traditional Smokey Flavored Fish Fry in Banana Leaf

ABOUT Traditional Smokey Flavored Fish Fry in Banana Leaf RECIPE

The special traditional masala, the flavour of the banana leaf, the smokey flavour of the charred coal, makes the fried fish tangy, delicious and irresistible.

Ingredients Serving: 3

  1. Pieces of fish 3 (of any kind)
  2. Turmeric 1 1/2 teaspoons
  3. Salt 1 teaspoon
  4. Coconut oil 3 tablespoons
  5. Curry leaves 1 sprig
  6. Mustard seeds 1 teaspoon
  7. Ginger root 1 inch ( minced fine )
  8. Garlic cloves 5 ( minced fine )
  9. Onion 2 medium (finely chopped )
  10. Tomato 1 medium ( finely chopped )
  11. Green chilli 1 ( chopped fine )
  12. Red chilli powder 1 teaspoon
  13. Coriander powder 1 teaspoon
  14. Salt ( as per taste )
  15. Sugar 1/2 teaspoon
  16. Vinegar 1 tablespoon
  17. Few blocks of well charred coal
  18. Pieces of cotton thread 3
  19. Banana leaves 3 pieces

Instructions

  1. Clean and wash the fish and marinate in salt and turmeric for half hour.
  2. Take a flat bottomed skillet. Heat one tablespoon of coconut oil.
  3. Add in the mustard seeds.
  4. When the mustard seeds splutter add the curry leaves and fry for a few seconds.
  5. Add in the minced ginger and garlic and fry until the raw smell disappears.
  6. Add in the onions and half teaspoon salt until translucent.
  7. Drop in the tomatoes and cook until nice and mushy.
  8. Add turmeric, red chilli powder and coriander powder with a tablespoon of water and fry this for thirty seconds.
  9. Add in salt, sugar and vinegar and fry for sometime.
  10. After the masala is fried well keep it aside.
  11. Now take the banana leaves, one at a time and place them on a direct flame till the leaves get slightly soft, to help in wrapping up the fish easily.
  12. After the leaves soften, on each leaf spread some fried masala and over it place the marinated fish and spread some more masala over again.
  13. Wrap up each fish with the banana leaf and tie it up with a cotton thread.
  14. Let the fish sit in the masala and the banana leaf for fifteen minutes so that the masala seeps into the fish well.
  15. Now, to fry the fish, heat up a broad skillet well .
  16. Add coconut oil on the skillet and heat up very well.
  17. Place the wrapped up fish on the skillet one next to the other.
  18. Place some charred coal over the fish and cover the fish with a lid for six minutes.
  19. Open the skillet after six minutes, flip the fish over the other side and place the charred coal and cover for another six minutes.
  20. After six minutes take off the fish from the skillet and place them on to a plate.
  21. Cut the thread and open up the banana leaf .
  22. The traditional Fried Fish is now ready to be eaten.
