ABOUT SCHEZWAN MAKKA CHOLAM / JOWAR KUZHI PANIYARAM RECIPE

Kuzhi Paniyaram is basically a popular South Indian breakfast dish. It is generally made using the left over Idly Dosa batter in a cast iron paniyaram pan. . I never prepare paniyarams using left over idly batter , I always prepare the batter for Paniyaram from scratch and to make it more healthy I have added makka cholam flour/ jowar flour along with rice and urad dal. I have added schezwan sauce to the batter to make this snack a favourite one for kids too. A very healthy and delicious snacks loved by one and all.

Ingredients Serving: 6

  1. Raw rice 1/2 cup
  2. Par boiled rice 1/2 cup
  3. Urad dal 1/4 cup
  4. Makka cholam flour / jowar flour 1 cup
  5. Salt to taste.
  6. Oil for deep frying.
  7. Ingredients for Schezwan puree
  8. Kashmiri red chillies 5 nos
  9. Small onions 4 nos
  10. Garlic 5 cloves
  11. Ginger 1/2 inch piece
  12. Soya sauce 1/4 tsp
  13. Sugar 1 tsp
  14. Pepper powder 1/4 tsp
  15. Vinegar 1 tsp

Instructions

  1. Grind together the schezwan puree ingredients to a smooth paste adding required water.
  2. Soak rice and urad dal two hours . Grind rice, and urad dal together .
  3. Add jowar flour, schezwan puree and salt and blend it well.
  4. Keep aside the batter for two hours .
  5. After two hours , preapare paniyarams in a paniyaram pan with ghee or oil .
  6. Cook the paniyarams in medium flame till the paniyarams become golden brown .
  7. Yummy schezwan makka cholam/jowar kuzhi paniyarms are ready to be served.
