Ingredients Serving: 5

  1. I kg tomatoes (750 grams pureed and 250 grams diced)
  2. 1 medium sized onions finely chopped
  3. 5 – 6 pods of garlic minced fine
  4. 1/4 cup olive oil
  5. 1 teaspoon dried oregano
  6. ½ teaspoon black pepper powder
  7. 1 teaspoon chilli flakes
  8. ½ teaspoon Italian seasoning
  9. ¼ cup fresh basil leaves chopped
  10. 1 tablespoon fresh parsley chopped
  11. 1 stalk celery finely chopped
  12. 1 teaspoon honey
  13. Salt to taste

Instructions

  1. Heat olive oil in a pan, to this add minced garlic, finely chopped onion and sauté till brown. To this add celery and sauté till soft.
  2. To the above add tomato puree, diced tomatoes, oregano, black pepper, chilli flakes, Italian seasoning, honey, salt.
  3. Cook on low flame till thick, it will take around 45 min to an hour.
  4. Once it starts to thicken add the basil and parsley and continue to cook for about 5 min. Check seasoning and adjust according to taste
  5. Once everything is blended well and reached the desired sauce consistency, remove from heat and allow it to cool.
  6. Once cool keep refrigerated for about 1 week in an air tight container.
