ABOUT Baked Tomato Chicken RECIPE

A one pot dish to make your dinner festive. Try this grilled tomato chicken with some Italian seasoning and feel like being to Italy.

Ingredients Serving: 3

  1. Chicken 250 g
  2. Ripe Tomatoes 6 (diced)
  3. Onion 1/2 (chopped)
  4. Garlic 4 pods (sliced)
  5. Ginger garlic paste 1 tsp
  6. Salt 1 tsp
  7. Pepper powder 1 tsp
  8. Olive oil 1 tbsp
  9. Oregano 1 tsp
  10. Dried Rosemary 1 tsp
  11. Corrainder leaves 2 tbsp (chopped)
  12. Red chili flakes 1 tsp
  13. Mozarella cheese 1 inch cube
  14. Amul cheese 3

Instructions

  1. Marinate the chicken pieces with salt, pepper and ginger garlic paste. Let it rest for at least half an hour.
  2. In the meanwhile, prepare the tomato bedding.
  3. For this, in a bowl, mix together the diced tomatoes, onion and garlic.
  4. To this, add salt, pepper, chili flakes, oregano, dried rosemary, and corriander leaves.
  5. Mix well.
  6. Now grease a baking dish with olive oil. Use a dish that is grill-safe. I have used a ceramic dish without any silver/golden lining.
  7. Transfer the tomato mixture to the baking dish.
  8. Spread it throughout the base of the dish evenly.
  9. Now place the marinated chicken pieces on top of the tomato bedding, securing them in small shallow wells.
  10. Grill the dish for 20 minutes.
  11. Then turn the chicken pieces and grill for another 20 minutes, until chicken is cooked perfectly.
  12. Serve hot with crispy croutons or risotto.
