ABOUT Bedmi Poori (Urad Dal stuffed Poori) RECIPE

People from Uttar Pradesh and Delhi need no introduction to this delicious and wonderful Poori as these are the rage in these two States for breakfast. Served with Aloo Masala they make the most wonderful breakfasts ever!

Ingredients Serving: 4

  1. For the Pooris:
  2. 2 cups whole Wheat flour(Atta)
  3. 2 1/2 tbsp Semolina(Sooji/Rava)
  4. 2-3 tbsp Oil
  5. 1 tsp Salt
  6. Water as required
  7. Oil for frying
  8. For the filling:
  9. 1 cup Urad Dal
  10. Water to soak the dal
  11. 2 tsp salt
  12. 1 tsp Kashmiri red chilli powder
  13. 1 tsp Asafoetida (Heeng)
  14. 2 Green Chilies – finely minced
  15. 1 1/2 tsp Garam Masala
  16. 2 tsp Coriander Leaves

Instructions

  1. To make filling:
  2. Wash and soak urad dal in enough water for 2-3 hours. Drain and grind to smooth paste, without adding water.
  3. Empty the contents into a bowl and mix in spices and coriander leaves. Set aside.
  4. To make Poori’s:
  5. Take whole wheat flour, semolina, salt and oil in a big bowl and start kneading by adding water slowly.
  6. Knead till you get semi soft dough. Cover the dough and set aside for 30 minutes to become soft and supple.
  7. Knead the dough and divide it into 11-12 equal sized balls. Roll out each ball into 1½ - 2 inch discs.
  8. Place 1 tsp. of filling in the centre and bring the sides together and form the roundel again. Using a rolling pin, roll them slightly into thick poori’s.
  9. Repeat the process and make poori’s with all the balls.
  10. Heat enough oil in a deep bottom vessel and deep fry poori’s until nice puffed up nice golden on both the sides. Remove on to a kitchen tissue.
  11. Serve piping hot with aloo masala.
