Southern Fried Chicken

Ingredients to make Southern Fried Chicken

  • chicken (with or without skin) - 250 gm
  •  red chilli powder - 1 tsp
  •      ginger garlic paste - 1 tsp
  •  buttermilk - 1 cup
  •  all purpose flour - 1 cup
  • Baking powder - 1 tsp
  •  chilli powder - 1/2 tsp(optional)
  • salt as needed

How to make Southern Fried Chicken

  1. Marinate Chicken pieces with red chilli powder, ginger garlic paste and salt for around 4 to 5 hrs.
  2. Mix buttermilk and salt in a wide bowl.
  3. Mix together all purpose flour,baking powder,salt and chilli powder (if you want it spicy together)
  4. Take a container with lid and put some coating mixture.
  5. Dip the chicken in buttermilk mixture and then put in the container with the coating mixture.  Close the lid and shake the container two or three times.
  6. 6.Now open the lid and shake the coated chicken gently so that excess flours  fall off and you get that crumbly texture on the chicken.You can repeat the process to get extra  coating.I personally prefer only a single coating.
  7. Heat oil to high heat and reduce to medium low.Drop the chicken and fry in small batches.
  8. Fry until golden brown.
  9. Serve with mayonnaise or any favourite dip.

My Tip:

1.If the temperature of oil is too high,the outer coating will change colour but the chicken will not get cooked inside. 2.If the temperature of oil is too low,the outer coating will not get crispy and you will end up   with a oil drunked soggy chicken.
