Ingredients to make Crostini

  • 3 large slices of whole wheat bread
  • 2 tablespoons extra virgin olive oil
  • 2 spring onion chopped finely
  • 4 clovesGarlic thinly sliced
  • 1 large brinjal (300 g)
  • 2tomatoes chopped finely
  • salt to taste
  • Black pepper to taste
  • 2 teaspoons of lemon juice
  • 1 sprig of fresh coriander leaves chopped

How to make Crostini

  1. Arrange the large brinjal on a baking sheet sprinkle a little bit of olive oil on it and cook in preheated oven at 180 ' C on both sides for a few minutes, then leave it in the oven to rest.
  2. Put in a bowl the chopped onion, tomato, garlic, olive oil and a pinch of salt.
  3. Cut each bread slice into 4 pieces and toast the rectangles obtained in a preheated oven at 200 ' C by turning them on both sides.
  4. Remove the brinjal from the oven and peel the skin .
  5. Cut the flesh coarsely chop and mix with the chopped tomato and onions
  6. Add two teaspoons of lemon juice. Mix well.
  7. To add the little Indian touch add some fresh coriander leaves chopped.
  8. Season with salt and black pepper, spread the mixture over the hot croutons and serve immediately.
