ABOUT Arancini RECIPE

Deep fried risotto balls, crunchy on the outside with a molten mozzarella center, a perfect dish to warm you up this winter.

Ingredients Serving: 2

  1. Italian Arborio Rice - 1/2 cup
  2. Onion - 1 small
  3. Garlic - 3-4 cloves
  4. Mushrooms - 4-5 pieces
  5. Dried Thyme - 1 tsp
  6. White Pepper powder - 1/2 tsp
  7. Olive oil - 2-3 tbsp
  8. Water - 1-2 cups
  9. Egg - 1
  10. Bread - 2 end slices of a loaf
  11. Parmesan cheese - 3-4 tbsp (grated)
  12. Mozzarella - 50g
  13. Oil for frying
  14. Salt to taste

Instructions

  1. Finely chop onions and garlic.
  2. Slice the mushrooms.
  3. Blitz the bread slices in a blender to get fresh bread crumbs.
  4. Roughly cut mozzarella into cubes and keep aside.
  5. In a wok add olive oil and saute the onions and garlic.
  6. When this mixture turns glassy add the mushrooms and continue to saute.
  7. While the vegetables are cooking, take 2 cups of water in a vessel and heat it up to a boil.
  8. After a couple of minutes when the mushrooms become soft, add the Arborio rice and saute for a couple of more minutes. If the mixture looks dry add a tbsp of olive oil.
  9. Add about three-fourths of the hot water to the rice - vegetables mixture. Stir continuously.
  10. Check if the rice is cooked. The rice should not be chalky but just done, al dente. If required add the remaining hot water too.
  11. When the rice is almost done add pepper powder, thyme and salt.
  12. Once the rice is cooked take it off the heat and sprinkle grated Parmesan cheese and mix. Risotto is now ready.
  13. Now heat oil in a wok for frying and while that is happening, beat an egg in a bowl for an egg wash.
  14. Make lime-sized balls of the risotto and put a cube of mozzarella in the center.
  15. Dip it in the egg and then roll in the fresh bread crumbs.
  16. Deep fry on a low flame.
  17. Serve hot with tomato sauce.
