ABOUT Chana Pulao (Rice cooked with spiced Chickpeas) RECIPE

When we crave comfort food and want to have something for lunch then this is one option which I always cherish. This is spiced rice cooked with chickpeas and the result – a mouth-watering pulao.

Ingredients Serving: 4

  1. 2 cups long grained Basmati rice
  2. 1/2 cup boiled Chickpeas
  3. 2 tsp Salt to taste
  4. 2 Bay leaves
  5. 1 big/2 small Onions – sliced
  6. 1 inch piece Ginger – minced
  7. 2 Green Chilies – minced
  8. 1 tsp Turmeric Powder (Haldi)
  9. 1 tsp Red Chili Powder
  10. 1 tsp Coriander Powder (Dhania)
  11. 2 tbsp Coriander Leaves – chopped
  12. 2 tbsp Oil
  13. 2 tbsp Cream
  14. 1 tsp Cardamom Powder (Elaichi)
  15. 2 tsp Garam Masala

Instructions

  1. Wash and soak long grained basmati rice for half an hour. Steam or boil till done. Spread on a plate and leave it to cool.
  2. Add oil to a non stick pan and fry bay leaves till brown. Now add cardamom powder and fry till fragrant.
  3. To this add minced ginger and green chilies. Fry for a minute and add sliced onions and fry till nice brown.
  4. Now add boiled chickpeas and fry for 5-6 minutes. Mix by adding turmeric powder, red chili powder and coriander powder. Combine well and add cream and salt.
  5. Add cooked rice and gently mix to combine everything. Stir in garam masala.
  6. Serve by garnishing with fresh coriander leaves.
