Ingredients Serving: 5

  1. Potato 2 medium
  2. Lotus stem 1 medium sized
  3. Tomato 2
  4. Ginger paste 1/2 tsp
  5. Green chillies 2
  6. Clarified butter 1 tbsp
  7. Cumin seeds 2/3 tsp
  8. Salt 1 tsp
  9. Red chilli powder 1/4th tsp
  10. Turmeric powder 1/3 tesp
  11. Water as needed
  12. Green coriander leaves 2 tbsp

Instructions

  1. Peel lotus stem and cut slant rounds around half centimetres thick. Wash properly.
  2. Peel and cut potatoes in small dices. Wash properly.
  3. Puree tomatoes with green chillies in a grinder.
  4. Heat a cooker. Add clarified butter. When heated, splutter cumin seeds.
  5. Add ginger paste. Fry for a while.
  6. Add tomato puree. Stir fry till fat oozes out.
  7. Add seasoning salt, red chilli powder and turmeric powder. Mix well.
  8. Add potatoes and lotus stem.
  9. Add water. Just enough to cover vegetables well.
  10. Put pressure weight and give one whistle then put the flame on low and let it cook for five minutes. Switch off the flame.
  11. When pressure is released, open the cooker and cook on medium for five more minutes.
  12. Remove from flame.
  13. Top with chopped coriander leaves and serve.
