ABOUT Kerala Spicy Mixture RECIPE

Kerala Spicy Mixture is a tasty teatime snack a combination of Sev, Boondhi, Fried Peanuts, Garlic and Curry Leaves with sufficient quantities of Spices and Salt. This snack gives a nostalgic feeling to most of Malluz about their childhood days as this was an affordable teatime crunchy snack

Ingredients Serving: 6

  1. Gram flour (besan flour) 2+1 cups
  2. Peanuts a handful
  3. Curry leaves a few
  4. Garlic ( crushed with skin) 6 cloves
  5. Turmeric Powder 1/4+1/4 tsp
  6. Red Chilli Powder 3/4+1/4 tsp
  7. Asafoetida 2+2 pinch
  8. Salt to taste
  9. Water as required
  10. oil

Instructions

  1. Combine 2 cups gram flour, 3/4 tsp chilli powder, 1/4 tsp turmeric powder, 2 pinch asafoetida and salt in a mixing bowl. Add water little by little and start kneading to form a nice smooth dough. This dough is used to make sev.
  2. Keep the idiyappam (string hopper maker) maker ready with the filled dough.
  3. Combine 1 cup gram flour, 1/4 tsp turmeric powder, 1/4 tsp red chilli powder, 2 pinch asafoetida and salt in a bowl. Add water carefully to make a dosa like batter. This is used to make boondhis.
  4. Heat oil in a wide pan. Using the idiyappam maker press the dough into hot oil in circular motion. Fry both sides until golden brown in medium low flame.
  5. Heat oil in a pan. Pour a small ladle full batter to a slotted spoon, holding the spoon just over the oil. Fry the boondhis until golden brown. Do this in batches to avoid overcrowding the pan. Drain onto a paper towel.
  6. To the same oil add peanuts and fry until done. Drain on a paper towel. Similarly fry garlic cloves until brown. Drain on a paper towel.
  7. Add in the curry leaves and fry until crispy. Drain and keep them aside.
  8. Crush the sev gently with your hands. Combine the crushed sev, boondhi, fried garlic, curry leaves and peanuts in a bowl adding salt. You can add asafoetida and red chilli powder to adjust spice level. Let the mixture cool completely.
  9. Transfer to an airtight container. Serve with hot tea and enjoy
