Ingredients to make Chicken 65

  • 1/2 kg chicken fillets (tenderloins) diced into 1" pieces
  • Marinade for chicken -
  • 3 tbsp plain flour
  • 1 tbsp cornflour
  • 1 tsp red chili powder
  • 1 tsp garlic powder
  • 1 tsp soy sauce
  • Salt and pepper to taste
  • masala -
  • 1 tsp mustard seeds
  • 1-2 sprigs curry leaves
  • 1 large onion chopped finely
  • 2-3 tsp green chili paste or 3 green chilies sliced finely
  • 1 tsp red chili powder
  • 1 tsp garam masala powder
  • 1/2 tsp coriander powder
  • 1/2 tsp Soy sauce
  • Pinch of orange red dye mixed in little water (optional)
  • 3 tbsp thick yogurt
  • salt to taste
  • 3 tbsp olive oil
  • chopped coriander leaves - a handful
  • oil for Deep frying

How to make Chicken 65

  1. Combine chicken with all marinade ingredients and mix well. Let it rest for 30 minutes in refrigerator.
  2. Heat oil in a wok. Fry the chicken in batches till crisp. Remove and drain excess oil on kitchen paper napkins.
  3. Heat oil in nonstick pan. Add curry leaves, green chili paste or chilies, mustard seeds. Once mustard seeds pop, add onion and stir fry till onions are caramelized.
  4. Add red chili powder, garam masala powder, coriander powder, soy sauce, and orange red color. Sauté well till oil separates.
  5. Add yogurt and cook for couple of minutes. Adjust salt if required.
  6. Add chicken and mix well. Cook for another minute. Add chopped coriander leaves as garnish.
