ABOUT Shalgam Gobhi Gajar Ka Achar(Seasonal Turnip, cauliflower, carrot pickle) RECIPE

A wonderful winter pickle... best eaten in a couple of months when the vegetables are still crunchy - serve with paranthas, khichdi, curd rice, dal chawal - actually anything!

Ingredients Serving: 10

  1. Cauliflower-1/2 kg
  2. Turnips-1/2 kg
  3. Carrots-1/2 kg
  4. Mustard powder-2 tbsp
  5. Vinegar-1/2 cup
  6. Jaggery/gur/Sugar-250 gms
  7. Mustard oil-1cup
  8. Coarsely ground Ginger paste-3 large tbsp
  9. Coarsely ground Garlic paste-3 large tbsp
  10. Salt and red chilli powder to taste
  11. Whole red chillies- 4

Instructions

  1. Wash and peel carrots, turnips and cauliflower, Cut carrots and turnips into longish pieces, separate cauliflower into florets.
  2. Dry in the sun for 2 days, or if the weather is cloudy, drain on paper towels and dry indoors for 2 days.
  3. Alternatively, boil a large pan of water, add the vegetables and let cook for 3 minutes, drain and then dry completely in the sun.
  4. Heat mustard oil in a heavy kadhai till smoking, let cool a bit.
  5. Fry ginger and garlic till golden, add vinegar, red chillies and jaggery .Add the vegetables and cook for 5 minutes,add salt and red chilli powder, toss well, cool and bottle into clean and dry bottles.
  6. Keep in the sun for 2-3 days and your pickle is ready!Keep stored in the refrigerator, it will last several months.
