Heat the ghee in a kadhai, add the semolina and saute, stir continuously so it doesn’t burn.
Cook till the semolina gets a light brown, even colour.
In a saucepan, bring the milk to a boil with sugar, so it dissolves. Gently add the hot milk to the sooji, it will sputter.
Cook for 8-10 minutes till the sooji kheer is thick and stir gently so it doesn’t become lumpy.
Garnish with almonds and raisins. Serve hot
