ABOUT Veg Kolhapuri RECIPE

A popular Maharashtrian vegetable preparation. Veg Kolhapuri is hot and spicy curry. Can be prepared less spicy also. Goes well with rice and rotis.

Ingredients Serving: 4

  1. tomato cubes 2 cups
  2. cashew 10
  3. Whole kashmiri chilli 5
  4. Butter and oil 1 tbsp each
  5. cumin seeds 1 tsp
  6. Bay leaf 1
  7. cinnamon 1 inch stick
  8. cloves 4
  9. cardamom 2
  10. ginger garlic paste 2 tsp
  11. Green chillies 1 tsp
  12. onion cubes 1/2 cup
  13. chilli Powder 1/2 tsp
  14. Turmeric and coriander powder 1 tsp each
  15. Garam masala 1 tsp
  16. salt as per taste
  17. Vegetables & other ingredients: oil 2 tbsp
  18. Blanched cauliflower florets 1/2 cup
  19. Boiled green peas, Blanced carrots and beans 1/4 cups
  20. paneer cubes 1/4 cup
  21. Broken cashew nuts 1 tbsp
  22. capsicum 1/2 cup
  23. salt to taste
  24. Fresh cream 2 tbsp


  1. Make a paste with tomato, dry chillies and cashews
  2. In a pan put butter & oil. Add jeera,then put,bay leaf,cinnamon stick,cloves & cardamom. Fry. Add ginger garlic paste and fry well. add green chillies also
  3. Add onions and fry well . then add tomato paste, chill powder ,coriander powder,turmeric, garam masala & some salt also. Fry well till oil separates. Turn off the heat .
  4. In another pan,add oil,when hot,add all vegetables,broken cashew nuts & salt. fry well for 2.min. Then add the prepared gravy ,with enough water. Mix well. If you want more gravy, add more water. Fry for some time.. Then add cream too. Mix it slowly. After a few minute. Turn off the heat.
  5. Serve hot
