Stuffed & Fried Jumbo Pasta Shells

Ingredients Serving: 5

  1. 10 jumbo pasta shells
  2. Oil for Deep frying
  3. For Stuffing -
  4. 1 small head broccoli diced finely
  5. 1 cup shredded baby spinach (or regular)
  6. 3 cloves garlic minced finely
  7. 1 chicken breast cooked and diced finely
  8. 4 tbsp feta cheese
  9. Salt and pepper to taste
  10. 1 tbsp Butter
  11. 1 tsp olive oil
  12. For Alfredo Sauce-
  13. 2 tbsp Butter
  14. 1 cup full cream
  15. 1 cup Parmesan cheese finely grated
  16. 3/4 cup dehydrated potato flakes
  17. 1 Tsp dried Basil
  18. Salt and pepper to taste
  19. For outer cover-
  20. 2 Beaten eggs
  21. Breadcrumbs or Rawa as required

Instructions

  1. For Stuffing-
  2. Heat butter and oil in nonstick pan. Add garlic and stir fry for 30 seconds.
  3. Add broccoli, spinach, and chicken. Stir fry for 5 minutes.
  4. Add feta cheese and sauté.
  5. Add salt and pepper to taste taking care that feta is a salty cheese. Keep aside.
  6. For Alfredo Sauce-
  7. Heat a pot. Add butter. Once it melts, add cream. Cook the sauce till it starts thickening.
  8. Add Parmesan cheese, herb, salt and pepper to taste.
  9. Add potato flakes and mix well. The sauce will get denser and thicker.
  10. Mix the prepared stuffing in the sauce and give it a stir to mix thoroughly.
  11. To assemble-
  12. Cook the pasta in lot of salted water for 15 minutes. Drain and run them under cold water.
  13. Heat a deep thick bottomed pot with oil.
  14. Fill the shells with 2 tsp stuffing and close the ends without the stuffing coming out.
  15. Dip the shells in egg and roll in breadcrumbs or Rawa. Deep fry in medium hot oil till golden in color on all sides.
  16. Remove to a plate covered with paper napkins to drain oil.
  17. Serve with any dip of your choice.
