An authentic Bengali deep fried snack

Ingredients Serving: 2

  1. Long Purple Big Size Eggplant/Brinjal - 1
  2. Besan/Gram Flour - 1 1/2 cup
  3. Salt to taste
  4. Turmeric Powder - 1/2 teaspoon
  5. Red Chilli Powder - 1/2 teaspoon
  6. Cooking Soda - A pinch
  7. Black salt - 1/2 teaspoon
  8. Mustard oil- 1/2 liter
  9. Rice Flour - 1 teaspoon (optional)

Instructions

  1. Cut the eggplant/brinjal vertically into thin long pieces.
  2. Marinate them with a little salt and keep for 15 minutes.
  3. On the other hand, take gram flour, turmeric powder, red chilli powder, cooking soda and salt in a bowl. Add required water to make the batter.
  4. Heat mustard oil for deep frying. When the oil is hot, add a teaspoon of oil in the batter and mix it.
  5. Now coat the eggplants in the batter and deep fry till in golden colour.
  6. Serve hot as snack or a starter.
