Christmas is around the corner. How can we miss baking cakes? This is an ultimate fruit and nut cake without soaking in alcohol and baked without eggs, specially for Christmas.

Ingredients Serving: 5

  1. Mix of dried fruits and nuts (Tutti frutti, raisins, blueberries. cranberries, cherry, raisins, cashews, almonds, pistachios, figs, sultanas, etc. )
  2. Honey- 1/4 cup
  3. 1 Cup water
  4. Sugar - 1/2 cup
  5. Butter -1 cup (room temperature)
  6. Condensed milk -1/2 cup
  7. Flour- 1 cup
  8. Cocoa powder - 1 tsp
  9. Nutmeg, cinnamon and mace powder- 1/4 tsp
  10. 1/2 tsp baking powder
  11. 1/4 tsp Baking Soda
  12. Orange juice (from 1 big orange)
  13. lime juice ( from 1 lime)
  14. Orange and lime zest -1/2 tsp

Instructions

  1. First melt butter in a pan.
  2. Put all dry fruits, honey and water in butter.
  3. Cook on medium heat until fruits are soft. Stir gently. It will take about 7- 10 minutes .
  4. Once done, take it off the heat and put them in a glass bowl to cool down.
  5. Line the cake tin. Grease your cake tin with butter. Then dust with flour. Make sure all the corners are dusted equally with flour.
  6. Now turn the container to remove the extra flour. This method will ensure the cake comes out easily.
  7. You can bake this cake in an oven or pressure cooker.
  8. If you want to bake in pressure cooker, put some salt in it. Salt holds the heat for long time and provides essential temperature in which the cake bakes slowly and nicely without oven.
  9. Place a steel ring inside because there should some gap between the cake mold and bottom of the cooker so the cake bakes properly else the bottom will be burnt and the upper side of the cake will be uncooked.
  10. Now put the lid on the cooker without whistle and rubber ring of the pressure cooker lid.
  11. Now make the cake batter.
  12. In a mixing bowl, add butter, sugar and milkmaid. Give it a nice blend using a whisk or hand blender until it is thick and smooth.
  13. Then put in lime juice, lime zest and orange juice. Again blend it until smooth.
  14. Then put in cooked dry fruits and nuts. Mix in.
  15. Also add spice powder (blend of nutmeg, mace and cinnamon)
  16. Put a strainer straight on the bowl.
  17. Add flour, cocoa powder, baking powder and soda together in the strainer. Sieve all.
  18. Now fold dry ingredients in liquid ingredients until well combined.
  19. Put in prepared cake tin
  20. Level the top surface and then tap the tin.
  21. Put in the preheated pressure cooker and close the lid. Allow to bake for 50-60 minutes or until the toothpick inserted in the center of the cake comes out clean.
  22. To bake in oven, preheat the oven for 10 minutes at 160 C. Place the cake in oven and allow to bake for 50 minutes. In a small cupcake mold, it will take 20-25 minutes.
  23. Once baked, remove it and allow it to cool down to room temperature.
  24. Then loosen the sides using knife and flip over.
  25. Your cake is ready.
