ABOUT Fruit Cake RECIPE

Fruit cake made to be irresistible. It's a healthier way of enjoying a cake . Filled with delicious fruits , covered in whipping cream and topped with everyone's favourite, tutti frutti. This cake is a beauty. Make this when you have guests over to show off your baking skills .

Ingredients Serving: 7

  1. For the cakes (For each cake) -
  2. 1 1/2 cups of all purpose flour
  3. 1 cup of powdered sugar
  4. 1 tsp baking powder
  5. 1/2 tsp baking soda
  6. 1 tsp vanilla extract
  7. 3/4 cup of buttermilk
  8. 1/4 cup oil
  9. 2 eggs
  10. Fruits-
  11. Apples
  12. Pears
  13. Pineapples
  14. Oranges
  15. Peaches
  16. Apricots
  17. Plums
  18. For whipped cream-
  19. 1/2 cup heavy cream
  20. 1/4 cup of melted chocolate
  21. 1/4 cup of powdered sugar

Instructions

  1. Apply oil to your cake tin and set it aside .
  2. Preheat your oven to 180 degrees C
  3. In a bowl , mix together all of your dry ingredients .
  4. Add in all your wet ingredients in another bowl and once mixed well , start by pouring in the liquid into the dry flour mix .
  5. Mix well until the batter has no lumps .
  6. Also , keep in mind that we are making a two layered cake . So you will have to make two cakes of the same kind .
  7. I would suggest that you mix the batters for two cakes differently , just so that your batter will be well incorporared and you won't have a hard time mixing it .
  8. Let the cakes bake for about 30-35 mins .
  9. While the cakes are baking , chop up some of your fruits into bite sized pieces to put them in betweem the two layers .
  10. Leave some fruits aside for decorating .
  11. Next , in another deep bowl , pour in your heavy cream along with other ingredients and whisk until you get stiff peaks .
  12. Finally , let the whipped cream sit in the fridge .
  13. Take your cakes out , remove them from the pans and let them cool completely .
  14. After that , take a cake and put a thin layer of whipped cream onto it . Secure a lot of fruits on the whipped cream . This way you can ensure that the fruits can stay put while you cut into it .
  15. Put the other cake on top of this layer . And gently push it down so that it stays intact .
  16. As an optional step , let this huge cake rest in the fridge for about 5 mins or so just so that the cream stays stiff .
  17. Take the cake out and you are ready to decorate it .
  18. Cover the entire cake with whipped cream .
  19. Top it with a lot of fruits that you had kept earlier .
  20. To make it more lovely , I decided to add a handful of tutti frutti . Children love it too , so it is a plus point .
