Ingredients Serving: 8

  1. Flour 120gm
  2. Egg - 1
  3. Dark brown sugar - 80 gm
  4. Butter - 50gm
  5. Ginger powder - 1 teaspoon
  6. Cinnamon powder - 1 1/2 teaspoon
  7. All spice - 1 1/2 teaspoon
  8. clove powder - 1/4 teaspoon
  9. Nutmeg powder - 1/2 teaspoon
  10. chopped hazelnut - 25gm
  11. Chopped candied orange peel - 20gm
  12. dry cranberries - 25gm
  13. white chocolate chips - 25gm
  14. Baking Powder - 1 teaspoon
  15. Egg wash: egg -1
  16. brown sugar - 2 tablespoon (sprinkling)

Instructions

  1. Preheat the oven to 180 degrees celsius. In a large bowl, cream the butter and bown sugar. Add and beat it the egg.
  2. Sift the flour, gingerbread spice and baking powder in the wet mix. Mix well. Fold in the chopped nuts and fruit bits until completely incorporated.
  3. Shape the dough like a fat log on the cookie sheet lined with parchement sheet.
  4. Whisk the second egg and apply it on the log, using a pastry brush. Sprinkle the dark brown sugar for the extra crunch!
  5. Bake for about 40 minutes. Once baked, take it out and slice it into smaller slices.
  6. Bake again for 10 minutes on each side.
  7. Once its double baked, let it cool on the cooling rack!
  8. You can drizzle some melted chocolate or even dip an end in the melted chocolate! (optional)
