ABOUT Mango Shrikhand RECIPE

Shrikhand is an Indian sweet dish made of strained yogurt. Mango is not only the king of fruits but also the most widely consumed fruit in the world. It is a tempting shrikhand, prepared with mango pulp and yoghurt and is mostly enjoyed with puris in Maharashtra, India.

Ingredients Serving: 4

  1. 2 - small mangoes
  2. 1 cup - curd (hung)
  3. 1 tbsp - sugar (as per taste)
  4. 1/2 tsp - cardamom powder
  5. 2 tsp - Pistachio silvers
  6. Few strands of saffron

Instructions

  1. Blend mangoes to a puree. Take out two tsp puree and keep aside.
  2. To the left over puree in the mixer add hung curd, sugar and blend again.
  3. Add cardamom powder and 1 tsp pistachio slivers.
  4. Chill it and the Shrikhand is ready. Yes this is how an ordinary curd is converted into a delicacy.
  5. To Serve: In a bowl pour shrikhand, Top it with 2 tsps of mango puree. Garnish with pistachio slivers and saffron.
  6. You can add sugar depending upon the sweetness of mangoes . You can increase or decrease as it suits you.
  7. The origin of Shrikhand may be traced from Mahabharata where there are tales that Bhim invented this recipe and named it after Shri Krishna i.e. 'Shrikhanda'.
