Mixed Dry Fruits Biscotti

ABOUT Mixed Dry Fruits Biscotti RECIPE

Choose your favourite dry fruits and make this wonderfull crunchy biscotti. It goes well with a cup of hot tea or coffee.

Ingredients Serving: 10

  1. Plain flour - 1 1/2 cup
  2. Wheat flour - 1 1/4 cup
  3. Baking powder - 2 tsp
  4. Salt - 1/4 tsp
  5. Sugar - 1 cup
  6. Milk - 1/2 cup
  7. Oil - 2 tbsp
  8. Vanilla extract - 2 tsp
  9. 1 cup of almonds and cashews
  10. 1/2 cup of dried cranberries and cherries
  11. Apple cider vinegar 1tbsp diluted with 3 tbsp water

Instructions

  1. Sift the Dry ingredients and keep aside (except sugar)
  2. Cream the sugar and milk for 2 to 3 mins. Add in the apple cider vinegar, vanilla essence, oil and continue for another 3 mins. ( I used a stand mixer here)
  3. Fold in the flour in batches and the dry fruits too.
  4. Dough would be sticky
  5. Dust some flour over the dough and bring together to form a ball
  6. Now divide the dough into 2 equal balls and make a log at least 3 inches wide
  7. Dust some castor sugar over the logs
  8. Now bake these logs for 30 to 35 min in a preheated oven at 180 C degrees
  9. Take out and let it cool for around 15 mins
  10. Now with a serrated knife make slices of the log in one single go. (do not use the sawing motion)
  11. Now arrange the slices in the tray and let it bake further for 7 to 8 mins on each side
  12. Open and cool on a cooling rack
  13. Serve
