ABOUT Spiced Prunepavlova RECIPE

Prunes soaked in brandy and coffee with garam masala added gives a new dimension to pavlova . This recipe is from kitchen aid

Ingredients Serving: 8

  1. Instant coffee 2 tbsp
  2. Brandy 6 tbsp
  3. Castor sugar 50gms
  4. Prunes 250 gms
  5. Egg whites 3
  6. Caster sugar 175 gms
  7. Garam masal a pinch
  8. Double cream or whipping cream 300ml

Instructions

  1. Soaks prunes at least two days ahead. Put the coffee and sugar in a pan with 399 ml water and the prunes;bring to a simmer, then stir to dissolve the coffee. Take off the heat ,add brandy cool and spoon into a jar and refrigerate.
  2. Heat oven to 130 degrees C and line 2 baking sheets with parchment .
  3. Put the egg whites into the bowl of stand mixer and whisk on high speed until thicken and frothy. Slowly add sugar 1 tbsp at a time, add garam masala and whisk until stiff and glossy.
  4. Working quickly, pile spoonful of the meringue onto baking sheet, spacing them evenly apart. Bake for 45 min . It should come out easily without sticking to parchment . Open the door slightly and let them cool for an hour.
  5. To finish spoon some of the whipped cream onto the pavlova and spoon over the prunes.
