Spiced Prunepavlova

Ingredients to make Spiced Prunepavlova

  • Instant coffee 2 tbsp
  • Brandy 6 tbsp
  • Castor sugar 50gms
  • Prunes 250 gms
  • egg whites 3
  • Caster sugar 175 gms
  • Garam masal a pinch
  • Double cream or whipping cream 300ml

How to make Spiced Prunepavlova

  1. Soaks prunes at least two days ahead. Put the coffee and sugar in a pan with 399 ml water and the prunes;bring to a simmer, then stir to dissolve the coffee. Take off the heat ,add brandy cool and spoon into a jar and refrigerate.
  2. Heat oven to 130 degrees C and line 2 baking sheets with parchment .
  3. Put the egg whites into the bowl of stand mixer and whisk on high speed until thicken and frothy. Slowly add sugar 1 tbsp at a time, add garam masala and whisk until stiff and glossy.
  4. Working quickly, pile spoonful of the meringue onto baking sheet, spacing them evenly apart. Bake for 45 min . It should come out easily without sticking to parchment . Open the door slightly and let them cool for an hour.
  5. To finish spoon some of the whipped cream onto the pavlova and spoon over the prunes.

My Tip:

See that the bowl you use to whip eggs should be clean without any grease rub some vinegar to the bowl and beaters. Separate the egg whites without any trace of egg yolks. To check the doneness that is peak stage turn the bowl over and it should not fall After adding sugar and mixing, see wether the meringue is done, rub meringue between your fingers there should be no sugar.
