ABOUT Christmas Fruit Cake RECIPE

If you are not so fond of sultanas or raisins, this is a must try recipe for you. It has plump pieces of delicious cranberries instead of raisins and specially made this for my daughter,who hates fruit cake mainly because of raisins,bitter taste and its strong flavor.

Ingredients Serving: 6

  1. Dry fruits to soak – 1 cup (dried cranberries, tutti-frutti)
  2. For the caramel:
  3. Light brown sugar – ½ cup
  4. Water – 1 Cup
  5. Butter – 1 tsp
  6. For the cake:
  7. All-purpose flour – 1 ½ cup
  8. Baking powder – ¾ teaspoon
  9. Baking soda – ¾ teaspoon
  10. Dry ginger powder – ¼ teaspoon
  11. Cinnamon powder – ¼ teaspoon
  12. Cardamom powder – ¼ teaspoon
  13. Pinch of salt
  14. Eggs – 2
  15. Light brown sugar – 1 cup
  16. Melted Butter – ¾ cup
  17. Grapovin essence – ½ teaspoon
  18. Orange essence – ½ teaspoon
  19. Caramel – ½ cup
  20. Dry Nuts – ½ to 1 cup (cashew and almonds)

Instructions

  1. -	Make caramel in a thick bottomed vessel. Heat sugar and butter until it melts, lower the heat and add water, mix nicely and boil this liquid for 2 to 3 minutes and cool.
  2. -	Take dry fruits of your choice for soaking. Here I took dried cranberries and tutti-frutti.
  3. -	When caramel cools down, add in dry fruits, for soaking and keep aside for at least for 10 -12 hours.
  4. -	When you are ready to bake the cake, drain these soaked fruits, separate caramel and fruits and keep aside.
  5. -	This caramel can be used while mixing cake batter.
  6. -	Next step is preparation of the cake batter-
  7. -	First we will mix all the dry ingredients starting from flour, baking powder, baking soda, ginger powder, cinnamon powder, cardamom powder, salt in one bowl and dry mix by using wire whisk.
  8. -	Now drop all the dry fruits like soaked and drained fruits, chopped cashews and almonds.
  9. -	Once again mix the flour nicely and keep it aside.This is the dry ingredient mixture.
  10. -	Next step is- preheat the oven at 180 degree centigrade.
  11. -	Line the cake tin in which you want to bake. I have used bread tin over here.
  12. -	Here I have used Grapovin and orange essence, instead of fresh fruit juice.
  13. -	Next we should make wet ingredient mixture. Break the eggs, beat properly, and mix in butter, caramel, sugar and both the essences. Beat all these together until sugar dissolves.
  14. -	Now wet ingredient mixture is ready.
  15. -	Usage of beater is over. Take one wooden spatula and fold in dry mixture and make a uniform batter of wet and dry ingredients by using very light hand.
  16. -	Don’t over mix this.
  17. -	Now pour this ready batter to lined cake tin and bake this for 40 to 45 minutes or until done at 180 C.
  18. Enjoy this fruit cake in this festive season!!!
