ABOUT Cranberry And White Chocolate Biscotti RECIPE

I love to bake biscotti and my family loves to eat them. Trust me this is the best recipe for biscotti - tasty, crunchy and juicy cranberries take them to another level. They are the best accompaniment to a cup of hot coffee.

Ingredients Serving: 10

  1. 100 GM's dried cranberries
  2. 300 gm white chocolate
  3. 25 gm butter
  4. 225gm self raising flour
  5. 50gm brown sugar
  6. 50gm walnuts
  7. 1tea spoon vanilla essence
  8. 2 Eggs

Instructions

  1. chop 100 gm of chocolate into small pieces and set aside. break up the remainder and melt it in a small bowl with the butter. leave to cool. sift the flour into a mixing bowl and stir in the sugar, eggs, essence, cranberry, nuts and melted chocolate.
  2. add the reserved pieces of chocolate and mix to a dough. tip onto a lightly floured surface and halve.
  3. shape each half into a log about 28cm long and 2cm high. space well apart into a lightly oiled baking sheets and bake in a preheated oven,180 C for 25 minutes until risen , golden and firm. remove from the oven and reduce the temperature to 160 C
  4. cool the log for 20 minutes , then cut into 2cm slices .bake for further 15 minutes. dust with icing sugar and transfer to wire rack to cool. Serve with a cup of coffee.
