Sitaphal Phirni

Ingredients to make Sitaphal Phirni

  • 3 - Sitaphal | sugar Apple
  • 1 liter - Milk
  • 3 tbsp - Soaked rice
  • 1 cup - sugar
  • 10 to 12 - pistachios
  • 1/2 tsp - Green Elaichi | cardamom Powder

How to make Sitaphal Phirni

  1. Remove the sitaphal pulp and de-stone it. Roughly cut the pulp and keep aside.
  2. In a deep bottomed pan heat milk and let it reduce a bit.
  3. Drain the soaked rice and coarsely grind it. Add very little water as you grind the rice.
  4. To the reduced milk add coarsely ground rice and on medium heat, cook till the mixture thickens a bit. Stir continuously so that the rice does not get stuck to the bottom.
  5. Add sugar and stir till it dissolves.
  6. When mixture reaches desired consistency, switch off the gas. Keep the phirni aside to cool a bit.
  7. Add sitaphal pulp and mix well.
  8. Set in individual serving bowls and let the sitaphal phirni come to room temperature.
