ABOUT Walnut Shortbread Christmas Cookies RECIPE

These light, crumbly little biscuits are just the thing to have with family on festive occasions or otherwise. These have the goodness of walnuts.

Ingredients Serving: 12

  1. 50 gms walnuts
  2. 110 gms salted butter, room temperature
  3. 50 gms caster sugar
  4. 175 gms plain flour, sifted, plus some extra for rolling
  5. 50 gms rice flour
  6. Icing sugar for dusting

Instructions

  1. Grind the walnuts very carefully using the 'pulse' switch on a food processor.
  2. place the butter and sugar in a large mixing bowl and cream them together until pale and fluffy.
  3. Now mix the sifted flour and rice flour together and gradually work this into the creamed mixture, a tablespoonful at a time.
  4. Next, add the ground walnuts and use your hands to form the mixture into a smooth dough.
  5. Leave the dough to rest in a plastic food bag in the fridge for 30 minutes, then roll it out on a lightly floured work surface to a round approximately 8 inches in diameter.
  6. Now, using the cookie cutters, cut out the shapes you want, re-rolling the trimmings.
  7. Place them on the lightly greased baking sheet and bake in the pre-heated oven at 150 degrees C for 45 minutes.
  8. Cool them for 5 minutes before transferring to a wire rack. When completely cool, dust them with icing sugar .
  9. You can store these in an airtight container.
