Ingredients Serving: 6

  1. Oil 3 tbsp
  2. Green cardamom pods ,lightly crushed 1 tbsp
  3. Dried kashmiri chillies 5-6
  4. Long cinnamon sticks 2
  5. Cloves 1 tsp
  6. Mace 1 tbsp
  7. Fennel Seeds 1 tsp
  8. Onion finely sliced 3
  9. Garlic cloves ,peeled and grated 10
  10. Ginger garlic paste 1 tbsp
  11. Turmeric powder 1 tbsp
  12. Cumin powder 1 tsp
  13. coriander powder 1 tbsp
  14. Red chilli powder 1 tsp
  15. Tamarind 1/2 tbsp (soaked in half cup boiling water and paste extracted)
  16. Chicken stock 1 cup
  17. Water 1/3 cup
  18. Curry leaves 10-15
  19. Salt to taste
  20. Juice of 1 lime
  21. Fresh mint for garnish
  22. Chicken 1/2 kg
  23. Butter 2 tbsp

Instructions

  1. For marinade
  2. Kashmiri chilli powder 2 tsp
  3. Ginger garlic paste 2 tbsp
  4. Juice of 1 lime
  5. Clean and cut the chicken pieces and make slits on the outside .
  6. Marinate with kashmiri chilli powder , ginger garlic paste, 1 lime juice ,keep aside for 2 hours.
  7. Mix together ginger garlic and turmeric with 1 tbsp water and grind to a paste .
  8. Heat oil in a large stock pot over medium heat and curry leaves ,cardamom ,dried chilli, cinnemon ,cloves,mace and fennel seeds.
  9. Cook for 2-3 mins stirring occasionally .
  10. Add ginger garlic turmeric paste stir .
  11. Add onion to the stock pot and cook for 5-7 mins.stirring occasionally
  12. Add salt ,cumin ,coriander,and chilli powder ,and cook for 1-2 mins.( be careful in adding salt as the stock itself will have some salt in it.).
  13. Pour in strained tamarind water and stock and bring to boil .
  14. Simmer for 20 mins.
  15. Pan fry chicken in 1 tbsp butter and add to gravy.
  16. Finish curry with lime juice
  17. Serve with hot paranthas and rice.
