A delicious cake made in a pressure cooker

Ingredients Serving: 5

  1. Refined flour - 1 cup
  2. Powder sugar - 3/4 cup
  3. Baking powder - 1 tsp
  4. Vanilla essence - 1 tsp
  5. Egg -2
  6. Melted butter / white oil - 3/4 cup
  7. Milk - 1/2 cup or as required
  8. Golden raisin - 2 tbsp
  9. Black raisin - 2 tbsp
  10. Tutti fruity - 3 tbsp
  11. Cashew nut - 2 tbsp
  12. Walnut - 2 tbsp
  13. Chopped dates - 5

Instructions

  1. Take a bowl ,add maida or refined flour, baking powder, Powdered sugar. mix well
  2. Now add eggs , melted butter /oil and mix properly. gradually add milk little by little and make a semi thick batter.
  3. Now add all dry fruits , vanilla essence and mix well with batter.
  4. Heat a pressure cooker on low - medium heat for 2-3 minutes. place an aluminium rack inside the cooker.
  5. Grease cake tin with 1 tsp oil / butter, then dust with little refined flour.
  6. Pour cake batter into the cake tin and spread few cashews ,walnuts and raisin top of the batter. Tap cake tin on the kitchen table.
  7. Put cake tin inside the pressure cooker. Cover cooker with lid and do not lock the lid
  8. Increase flame for 3 minutes and then reduce flame on low fire for minimum 45-50 minutes.
  9. After 50 minutes insert a toothpick or knife inside the cake , if it comes clear, it means the cake is done. Take out from cooker and wait till the cake cools
  10. Slice and serve
