Ingredients Serving: 4

  1. Red Wine sauce -
  2. Cinnamon sticks - 2
  3. Red Wine Reduction - 200ml or red wine - 500ml
  4. Sugar - 100gm
  5. Star anise - 2-3
  6. Water - 100ml
  7. Pastry -
  8. Flour - 120gm
  9. Butter - 100gm
  10. Egg yolk - 1
  11. Apple cider vinegar - 1 tablespoon
  12. Chilled water - 30-50ml
  13. Sugar - 2-3 tablespoons
  14. Galette Filling -
  15. Red plums - 3-4 thinly sliced
  16. Sugar - 2 tablespoons
  17. Lemon Juice - 2 teaspoons
  18. Egg Wash -
  19. Egg -1
  20. Sugar - 2-3 tablespoons

Instructions

  1. Galette Filling - Thinly slice the red plums. In a bowl, add the plum slices, sugar and lemon juice. Refrigerate for 30 minutes.
  2. Pastry - In a large bowl, add the flour and sugar. Crumb the chilled butter into the flour to resemble wet sand.
  3. Add the egg yolk and mix. Add the apple cider vinegar and water, mix well until you can make a ball of dough!
  4. Chill for 30 minutes to an hour. Roll it out on a parchment sheet into a circle (sorta) and chill it for another 30 minutes.
  5. Red Wine Sauce: In a heavy bottomed pan, add all the ingredients. Cook it on low heat for 15-30 minutes or until it reduces to half.
  6. Plum - red wine galette: Preheat the oven to 180 degrees celsius. Place the rolled out pastry on a baking sheet lined with parchment.
  7. Add the plum slice on the pastry and arrange them as you like in the middle, leaving about 2-21/2 inch around the edges. Fold the edges, so it forms a pocket in the middle.
  8. whisk an egg and Brush it on the pastry with a pastry brush. Sprinkle the sugar on the egg wash. Pour 2-3 tablespoons of red wine sauce on the plum slices.
  9. Bake for 20-25 minutes or until golden brown.
