Ingredients to make Date And Carrot Walnut Cake

  • 100 gms refined flour
  • 100 gms caster sugar
  • 100 gms grated carrot
  • 100 gms chopped seedless dates
  • 2 eggs
  • 100 ml oil (any flavourless oil)
  • 1/2 tsp baking soda
  • 1/2 Tsp Vanilla essence
  • 50 gms chopped walnuts

How to make Date And Carrot Walnut Cake

  1. Beat the eggs and sugar till sugar dissolves. Add in the oil and beat well.
  2. Sift the baking soda together with the refined flour and add it to the batter. Mix well.
  3. Add the chopped dates, grated carrot , vanilla essence and half of the chopped walnuts. Mix well.
  4. Transfer the batter to a greased baking tin. Sprinkle the remaining walnuts on top.
  5. Bake at 180 degrees C for 35 mins or until a toothpick inserted in the centre comes out clean.

My Tip:

Oven temperatures vary. Keep an eye on the cake after 25 mins.
