Ingredients Serving: 4

  1. 150 grams Butter
  2. 1+1/2 cups Dark Muscovado sugar
  3. 2 cups Mixed dry fruits & glaced cherries
  4. 2 tbsp Orange zest
  5. 1tbsp Lemon zest
  6. 3 Large eggs (lightly beaten)
  7. 1/2 cup Almond meal
  8. 1+1/2 cupsFlour
  9. 1tsp Baking powder
  10. 1/2 tsp baking soda
  11. 1 tsp Cinnamon powder
  12. 1/4 tsp Nutmeg powder
  13. 1/2 tsp All spice powder

Instructions

  1. Put the butter, sugar, dry fruits,orange zest, lemon zest,orange juice in a large pan. Bring slowly to the boil, stir until the butter gets melted.
  2. Remove the pan from the heat and leave to cool for 30 minutes.
  3. Meanwhile, preheat the oven to 350F, line a round baking tin with baking paper and keep aside.
  4. Add the eggs,almond meal into the cooled fruits-orange juice mixture and mix well.
  5. Sift the flour, baking powder,baking soda and spices into the pan. Stir in gently, until there are no traces of flour left over.
  6. Spoon the mixture into the tin and smooth it down evenly.
  7. Bake for 45 minutes, until the cake is dark golden in appearance and firm to the touch.
  8. Cover the top of the cake with foil if it starts to darken too much.
  9. Leave the cake to cool in the tin.
  10. Slice it and enjoy.
