ABOUT Honey Ginger Cookies RECIPE

It has ginger flavour and also added spiciness from black pepper and mingled with some honey. So it's a perfect bite with your tea/coffee.

Ingredients Serving: 5

  1. All-purpose flour- 2 and 1/2 cup plus more for rolling
  2. Baking soda- tsp.
  3. Baking powder - 1/2 tsp.
  4. Eggs -2
  5. Unsalted butter, room temperature- 1 cup
  6. Brown sugar - 1 cup
  7. Honey-2 cup
  8. Fresh ginger(very finely grated) -1 tsp.
  9. Ground cinnamon-1 tbsp.
  10. Ground cloves - 1 tbsp.
  11. Salt a pinch
  12. Black pepper(grounded)-1 tsp.( can add more if you like it more spicy)

Instructions

  1. Preheat oven to 350 degrees C/175 degrees F. Line your baking tray with baking sheet. Sift flour, baking soda, and baking powder into a large bowl. Keep aside.
  2. In another bowl, beat butter and brown sugar with a mixer on medium speed until fluffy. Mix in spices, salt, and 1 teaspoon pepper, then eggs and honey. Reduce speed to low. Combine well.
  3. Add flour mixture slowly and beat until it forms a pliable dough. Divide dough into two, and wrap each in plastic wrap. Refrigerate for at least 1 hour.
  4. Roll out dough on a lightly floured surface to a 1/8-inch thickness. Cut out cookies in desired shapes using cookie cutters, and transfer to baking sheets.
  5. Bake until crisp, but not dark, about 20 minutes. Transfer cookies to wire racks, and let cool completely. You can decorate these cookies with icing or with dusting sugar, but I like them just plain, so didn't decorate.
