ABOUT Eggless Fruit Cake | Christmas cake RECIPE

Super soft, moist, flavourful and loaded with dry fruits cake. Not rum soaked its caramel soaked dry fruit cake. A perfect delicious aromatic cake for the special occasions.

Ingredients Serving: 10

  1. All purpose flour/maida 1 & 1/4 cup
  2. Oil or butter 1/2 cup
  3. Curd 1/2 cup
  4. Milk 1/4 cup ( room temperature)
  5. Flax seed powder 2 tablespoon
  6. Orange zest 1 teaspoon
  7. Baking powder 1/2 teaspoon
  8. Baking soda 1/2 teaspoon
  9. Powered sugar 1 cup
  10. Sugar 3 teaspoon
  11. Chopped or broken cashew nuts 1/4 cup
  12. Chopped or broken almonds 14 cup
  13. Chopped raisins 1/4 cup
  14. Tutti fruity 1/4 cup
  15. Chopped candied cherry 1/4 cup
  16. Garam Masala Powder 1/2 teaspoon
  17. Cumin powder a pinch
  18. Nutmeg powder a pinch
  19. Vanilla essence 1 teaspoon
  20. Boiling water 1/2 cup
  21. Some cherry and sliced almonds for garnishing

Instructions

  1. Preheat the oven to 180 degrees C. Grease a baking pan.
  2. Take a pan and heat it.
  3. Put 3 tsp sugar in the center and reduce the flame to low. Don't touch the pan or stir sugar.
  4. When all the sugar has completely melted pour the boiling water into it and switch off the flame.
  5. Mix the sugar and water well and bring it back to boil and put all the dry fruits in it.
  6. Boil again for 5 - 6 minutes. Let it cool down.
  7. Keep 3 tablespoon flour aside and in rest of flour add baking powder, soda, spice powders and flax seed powder.
  8. Mix vinegar to the milk and keep aside.
  9. Beat the oil and sugar well.
  10. Add vanilla, curd and vinegar mixed milk. Mix well.
  11. Fold in the flour mixture to it.
  12. Add 3 tablespoon flour in the soaked dry fruits.
  13. Mix orange zest and dry fruits in the batter and fold gently.
  14. Add remaining caramelized sugar water in it and mix.
  15. Pour the batter into the greased baking pan and level the top.
  16. Tap the pan gently.
  17. Spread some sliced almonds and candied cherry over it.
  18. Bake in preheated oven at 180° for 40 - 45 minutes or until the toothpick comes out clean.
  19. Slice when completely cool.
