Chicken Liver Pate

Ingredients to make Chicken Liver Pate

  • 250 grams chicken livers, well-trimmed
  • 1/2 small onion, thinly sliced
  • 1 small garlic clove, smashed and peeled
  • 1 bay leaf
  • 1/4 teaspoon thyme leaves
  • salt to taste
  • 1/2 cup water
  • 150 grams butter, at room temperature
  • 2 teaspoons whisky or rum
  • freshly ground pepper
  • Toasted slices of bread for serving

How to make Chicken Liver Pate

  1. In a pan, combine the chicken livers, onion, garlic, bay leaf, thyme and 1/2 teaspoon of salt. Add the water and bring to a simmer. Cover and lower the heat to sim. Cook until the livers are pink.
  2. Discard the bay leaf. Using a slotted spoon, transfer the livers, onion and garlic to a food processor; process until coarsely pureed.
  3. Keep the machine running, add the butter, 2 tablespoons at a time, until fully incorporated. Add the whisky, season with salt and pepper and process until completely smooth.
  4. Wrap with plastic and chill until ready to serve. Serve with toasted slices of bread.
