Ingredients Serving: 4

  1. 300 ml milk
  2. 150 ml cream
  3. 40g sugar
  4. 1 cinnamon stick
  5. 1/4 tsp nutmeg
  6. 4-5 cloves
  7. 1 tsp unsweetned cacao powder
  8. 1 tsp cornflour
  9. 3 egg yolks
  10. 2 tbsp kahlúa


  1. Place the egg yolks, cornflour and sugar in a bowl. Using a whisk beat until pale. Set aside.
  2. Place the milk and cream in a pot with roughly crushed spices and bring it to boil over medium heat.
  3. As soon as it starts boiling add half of warm milk and cream mixture over the beaten eggs, adding one ladle at a time, while whisking it continuously.
  4. Pour it back into the remaining milk-cream mixture and place over low heat. Stirring it constantly cook the mixture until it reaches 80 degrees C, and coats the back of the ladle.
  5. Add in the cocoa powder through a sieve and mix it well. Strain it through a sieve. Let it cool down a bit; it should be lukewarm. Add in the kahlúa and mix.
  6. Pour into serving glasses and enjoy
