A traditional Scottish cake with lots of dried berries, orange peel and almonds.

Ingredients Serving: 8

  1. 150 gms Butter,softened or refined oil
  2. 150 gms caster sugar
  3. 3 eggs
  4. 225 gm All purpose flour
  5. 1.5 Tsp Baking Powder
  6. 125 gms dried berries
  7. 125 gms raisins
  8. 50 gms orange peel
  9. 1 tsp orange essence
  10. 100 gms almonds
  11. 1 tbsp milk


  1. Take some boiling water and soak the almonds in it for about 10 minutes.
  2. Peel the almond skin
  3. Roughly chop half of the almonds
  4. Pre heat the oven at 150 degrees Celsius.
  5. Prepare an 8 inch tin by greasing and lining it with butter paper.
  6. In a large bowl, beat the butter/oil and sugar, till light and fluffy
  7. Add the eggs and essence, beat some more
  8. Add the flour and baking powder, mix with a spatula till well incorporated.
  9. Now add the raisins, berries, orange peel and the chopped almonds
  10. Add the milk
  11. Pour in the prepared tin
  12. Top with the remaining almonds
  13. Bake on the middle rack for 2 hours or till done
  14. Check for doneness by inserting a toothpick in the centre of the cake. It should come out clean.
  15. Enjoy with a cup of coffee
