Linzer cookies are perfect for bake sales, weeknight dessert cravings and Christmas cookie collections. The salted caramel accentuates the toasted almonds and subtle brown sugar flavour of these traditional Austrian Christmas cookies.

Ingredients Serving: 8

  1. 2/3 cup Almonds
  2. 1/2 cup brown sugar
  3. 1 cup Unsalted Butter, softened
  4. 1 egg
  5. 1 tsp vanilla extract
  6. 2 1/2 cups all-purpose flour
  7. 1/2 tsp baking powder
  8. 1/2 tsp baking soda
  9. 2/3 cup Cocoa Powder
  10. Salted Caramel Sauce/Dulce de leche, for filling

Instructions

  1. Toast the almonds in a small pan over medium-high heat. Cook, stirring often, until they turn golden brown and smell nutty. Rub the nuts in a kitchen towel and remove any loose skins, then transfer to a food processor.
  2. Blitz the almonds with 1/4 cup brown sugar in the food processor until finely ground.
  3. Cream butter and remaining 1/4 cup brown sugar until light and fluffy for about 2 mins. Add in the nut mixture and beat for a minute longer. Scrape down the bowl and beat in the vanilla and egg until well incorporated.
  4. Whisk together all of the dry ingredients in another bowl and add those to the wet mixture and fold until well combined. Form the dough into a ball, wrap it in plastic wrap and place it in the freezer for 25 mins.
  5. Pre-heat the oven to 175°C. Line a baking sheet with a baking mat. Roll out the dough on a well-floured surface to 1/4” thick.
  6. Using a cookie cutter, cut out as many cookies as you can and transfer to the baking sheet, leaving an inch of space between each. Using a smaller cutter of any shape you desire, cut the centers of half the number of cookies.
  7. Bake for 10-12 mins. Transfer the cookies to a wire rack and let them cool.
  8. Apply salted caramel sauce/dulce de leche on the inner surface of the whole cookies and pair them with the cookies with inner holes by placing them on top.
