ABOUT Guava Cheese RECIPE

It's a Goan sweet, commonly prepared during Christmas.I followed the recipe of Freda Sera Dias.

Ingredients Serving: 10

  1. Guava-500 grams
  2. Sugar-300 grams
  3. Butter-2 tablespoons
  4. Lemon juice-1/2 tablespoon
  5. Red food colour 4-5 drops

Instructions

  1. Heat water till it boils and add guavas.
  2. Cook guavas till tender and drain the water for further use.
  3. Peel guavas and scoop out seeds.
  4. Make puree of guavas and sieve.
  5. Boil the seeds with 1/2 cup of reserved water.
  6. Pass the boiled seeds through fine mesh sieve and mix the pulp with guava pulp.
  7. In a pan add guava pulp and sugar. Stir continuously on medium heat.
  8. When mixture starts bubbling, add lemon juice.
  9. After 10-15 minutes, the mixture will start to thicken, now add butter and food colour.
  10. -Keep stirring till the mixture leaves the side of the pan.
  11. Immediately pour the mixture in a greased plate.
  12. Cool it at room temperature for six to seven hours. Cut into desired shape.
