ABOUT Broken Wheat and Oats Idli RECIPE

Broken wheat/cracked wheat or Daliya is a nutritious ingredient and a great way to start your day with this wholesome meal. You can prepare this idli batter the previous night,refrigerate it and can use it the next day morning for breakfast. I have not used yeast to ferment the batter. The following measurement yields around 12 idlis. I made a simple tomato chutney as sidedish

Ingredients Serving: 3

  1. Broken Wheat - 2 cups
  2. Oats - 1/2 cup (grind oats to a fine powder)
  3. Yogurt - 1 cup
  4. Baking soda - a pinch
  5. Salt - 1/2 tsp
  6. For the Tadka :
  7. Ghee - 1 tbsp
  8. Mustard Seeds - 1/2 tbsp
  9. Jeera Seeds - 1/2 tbsp
  10. hing - a pinch
  11. Green chillies - 2 (chop them finely)
  12. Few curry leaves and coriander leaves

Instructions

  1. Heat 1 tsp of ghee and saute broken wheat until raw smell goes off.
  2. Once they are cooled down mix wheat, oats in a bowl.
  3. Add salt, yogurt, baking soda and half cup of water to the bowl.
  4. The batter need not be too thin as a dosa batter. Let it be a bit thick.
  5. Now heat ghee in a tadka pan.
  6. Add mustard seeds and jeera seeds to the pan.
  7. Let them splutter and then add the rest of the ingredients
  8. Saute for a minute. Mix this tadka with batter
  9. Rest the batter for at least 20-30 minutes before you start making idlis
  10. Broken Wheat idlis are very filling and can be served as an evening snack to kids too
