Ingredients Serving: 4

  1. baby potatoes 10-12nos
  2. Onion n green chilli paste 1 cup
  3. tomato puree 1 cup
  4. Ginger garlic paste 2tsp
  5. Mawa and cream paste 1 cup
  6. Red chilli and garlic paste 1/2 cup
  7. Dalchini 1
  8. Green cardamom 3-4
  9. Clove 4-5
  10. Bay leaf 1 medium
  11. Coriander powder 1 tsp
  12. Red chilli powder 1/2 tsp
  13. turmeric powder 1/2 tsp
  14. Sugar 1/2 tsp
  15. Salt to taste
  16. Asafoetida (heeng) 2 pinch
  17. Cumin seeds 1 tsp
  18. Stone mass (patthar phool) spice 3-4 curls
  19. Mustard oil 1 cup
  20. Water 1 cup or as you need
  21. Coriander and mint leaves and onion rings to garnish

Instructions

  1. First wash and peel the baby potatoes, prick each potato with the help of toothpick and then deep fry them.
  2. Dry roast masala dalchini, cloves, green cardamom stone mass and then grind it a masala powder.
  3. Heat 1 tbsp mustard oil till smoke point and cool it slightly. Add fried potatoes, red chilli, garlic paste, little salt, 1/4 tsp roasted masala mix it n cover it and cook for 4-5 minutes, stir occasionally.
  4. Heat 3 tbsp of oil in another pan it till smoke point, cool it slightly. Add a pinch or two of asafoetida, bay leaf, cumin seed one by one. After that add onion n green chilli paste, cook till it becomes slightly brown.
  5. Add ginger garlic paste cook it till raw smell gone, now add tomato puree and cook it for 3-4 minutes.
  6. Now add dry roasted masala, coriander powder, red chilli powder, turmeric powder one by one cook it for 2 minutes
  7. Add mawa and cream paste, cook it for 2-3 mints. Add sugar, 1 cup water and let it cook for 2 minutes.
  8. Now add in the potatoes along with salt to taste and let it cook for 5-6 minutes on low flame.
  9. Aaloo chatakedar is ready now.
  10. Garnish with coriander, mint leaves and onion rings and serve hot!
