ABOUT Plum Cake RECIPE

Soft, moist and spongy cake flavoured with rum

Ingredients Serving: 10

  1. Flour 2cups + 2 tbsp (for coating dry fruits)
  2. Baking powder 1 1/4 tsp
  3. Baking soda 1/2 tsp
  4. Eggs 4
  5. Butter 200 gm
  6. Vanila essence
  7. For Spice Powder-
  8. 1 small cinamon stick
  9. Cloves 2
  10. Cardamom 2
  11. Sugar 1 cup + 1/2 cup for caramel
  12. Fruits and Nuts - Cashews 15
  13. Walnuts 10
  14. Raisins 15
  15. Cranberries 8
  16. Almonds 15
  17. Bluberries 8
  18. Tutty Fruity 1 tbsp
  19. Rum 1 cup

Instructions

  1. Soak all dry fruits and fruits in rum for 2 days .
  2. Preheat oven at 160 degree celcius .
  3. Seperate egg white and yolks .
  4. Beat egg yolks with sugar and butter until smooth and fluffy .
  5. For caramel - Heat 1/2 cup sugar with 1 tbsp water in a pan until dark brown and then add 1/2 cup water to it to dissolve remaining sugar crystals .
  6. Add this caramel to egg yolks .
  7. Add spice mix to egg yolks .
  8. Strain all dry fruits and fruits .
  9. Add remaining rum to egg yolks .
  10. Add vanila essence to yolks .
  11. Sift flour and all dry ingredients at least 3 times.
  12. Fold flour in yolks in three batches by cut and fold method .
  13. Beat egg white untill fluffy .
  14. Mix 2 tbsp flour to dry fruits and fruits to pevent sinking to bottom .
  15. Mix egg white to yolks in three batches .
  16. Mix dry fruits to the batter .
  17. Prepare a cake mould and cover with parchment paper and grease with butter .
  18. Trasfer batter to mould .
  19. Decorate top of batter with flour coated tutty fruity .
  20. Bake it for 50-55 mins at 180 degree celcius .
