ABOUT Cabbage and Tomato Chutney - a tasty and tangy chutney with a crunch RECIPE

Cabbage is usually available in the market throughout the year, and usually at economical price too. Sometimes I wonder how can I make a tasty dish with this vegetable? Lately, I found an answer to this, by making the Andhra style cabbage and tomato chutney. And coupled this chutney with dosas made from leftover rice!

Ingredients Serving: 4

  1. 1-1½ cups cabbage
  2. 2-3 tomatoes (medium sized)
  3. 1 small ball of tamarind (small lemon sized)
  4. 2-3 green chillies
  5. 2 teaspoon oil
  6. salt as per taste
  7. For Seasoning -
  8. 1 teaspoon split black gram (urad dal)
  9. 1 teaspoon mustard seeds
  10. 1-2 dried red chillies
  11. A pinch of asafoetida (hing)

Instructions

  1. Chop cabbage into medium sized pieces. Heat a small saucepan, add cabbage pieces and fry. Cover and cook for few minutes, until it is half cooked.
  2. Chop tomatoes into medium sized pieces. Heat a saucepan and fry tomatoes alongwith tamarind until all the water is evaporated. Blend cabbage and tomatoes together in a blender along with salt to a course consistency.
  3. For seasoning, heat one teaspoon of oil, add urad dal and red chillies, fry for a few seconds.
  4. Add the mustard seeds and hing. Let the mustatd seeds splutter. Put off the heat. Add the seasoning to the coarse chutney blend and mix well.
