Ingredients Serving: 2

  1. Olive oil or Butter - 2 tsp
  2. Sliced Onion - 1/2 cup
  3. Chopped ginger - 1 tsp
  4. Chopped Zucchini - 1 big zucchini or 1 cup
  5. Chopped Parsley - 2 tbsp
  6. Salt as required
  7. Sugar - 1 tsp (optional)
  8. Milk - 1/2 cup
  9. Pepper powder - 1/2 tsp

Instructions

  1. Take a pressure cooker, add 2 tsp oil or butter.
  2. Add the sliced onion and ginger. Saute well until translucent.
  3. Add in the chopped zucchini and saute for a couple of mins.
  4. Add the chopped parsley, required salt, pepper powder, and sugar if adding.
  5. Close the cooker lid and cook for 2 whistles on medium flame.
  6. Open and let it cool. Once cooled, blend it into a smooth puree with milk and water as per your consistency requirement.
  7. Once again boil the puree and your hot healthy zucchini soup is ready.
