Ingredients Serving: 2

  1. 1 Small chopped onion
  2. 2 Chopped garlic cloves
  3. 1 Cup diced carrot
  4. 4 Cups chopped cabbage
  5. 1 Cup green beans
  6. 2 Whole bell peppers chopped
  7. 1 Cup diced tomatoes
  8. 6 Cups chicken broth
  9. 2 tbspTomato paste
  10. 2 Bay leaves
  11. 1/2 tsp Thyme and basil
  12. 2 Cups broccoli florets
  13. 2 Sliced zucchini
  14. Pepper powder for taste

Instructions

  1. In a large pot, cook onion and garlic over medium heat until slightly softened.
  2. Add carrot, cabbage and green beans and cook for 5 minutes.
  3. Stir in bell peppers, tomatoes, chicken broth, tomato paste, bay leaves and seasoning. Simmer for 6-7 minutes.
  4. Add zucchini and broccoli and let it simmer for another 5 minutes.
  5. Remove the bay leaves and serve hot.
