ABOUT Chicken Dum Biryani RECIPE

Ingredients Serving: 8

  1. Chicken (avoid breast) 1kg
  2. Curd 1/2 cup (bit sour)
  3. Juice of 2 lemons (if using sour curd use 1)
  4. Ginger garlic paste (freshly grounded) 3 tbsp
  5. A pinch of turmeric powder
  6. Chili powder 2 tsp
  7. Green chilli 10 (if you want to make it less spicy reduce the chilli powder)
  8. garam masala powder 1 tbsp
  9. 4-5 cardamoms
  10. Shah jeera 1 tsp
  11. Cinnamon 1 inch
  12. 5 Cloves
  13. 1 Star anise
  14. Little piece of nutmeg
  15. For Rice - Rice 1/2 kg
  16. Bay leaf 3
  17. 4-5 Cardamoms
  18. 4-5 Cloves
  19. 1 tsp Shahjeera
  20. Stone flower 1 piece
  21. Cinnamon 1 small piece
  22. Salt 2 tsp
  23. Water for cooking rice
  24. Ghee 3 tbsp
  25. Oil 3 tbsp
  26. 4 Deep fried chopped onions
  27. A bunch of mint leaves.

Instructions

  1. Marinate the chicken with all the spices (roasted and ground).
  2. Mix in curd, ginger, garlic, chili, salt, lemon juice and let it sit for an hour.
  3. Finely cut the onions and fry them well.
  4. Soak the rice for 30 minutes. Now add salt, spices, oil, and cook until al dente (you need to add extra water so that you can drain the rice).
  5. Take a deep heavy bottom pan.
  6. Add oil and ghee to the pan and keep it on the flame, then add the marinated chicken.
  7. Top with some deep fried onions and mint leaves then layer the rice and add some more fried onions and mint leaves.
  8. Keep adding the layer on top. Add deep fried onions and mint leaves, add milk soaked with kesar.
  9. Cover it with a lid and cover the lid with the dough to the edges.
  10. Cook on high flame for 15 minutes then simmer it for 20 minutes.
  11. Take a pan on the flame and place the cooker on the pan and cook for 30 minutes.
  12. The biryani is cooked perfectly when you can smell its aroma.
